Lately, Orange Marmalade has been everybody’s favorite at home. It was my elder sister, who came up with the idea of using it to bake a cake. I thought I could give it a try. Turns out, the cake did show good results. It was a happy ending indeed. 🙂 I feel it makes a perfect tea cake.
This is what you will need:-
ORANGE MARMALADE CAKE
Ingredients
- 1 cup refined flour
- ½ cup powdered sugar
- ¾ cup unsalted butter
- 1 tbsp orange marmalade (you can vary your quantity here by a tsp more or less)
- 1 tsp baking powder
- 1 pinch baking soda
- ½ cup orange tang solution (3 tsp tang: ½ cup hot water so that it dissolves quickly)

Directions
Step- 1 Pre-heat oven to 180 degrees centigrade. Grease your baking tin and keep aside.
Step- 2 In a bowl sift refined flour, baking powder and baking soda.
Step- 3 In another bowl whisk sugar and unsalted butter together. Add orange marmalade and mix well.

Step- 4 Add in the orange tang solution and flour mixture. Combine well.

Step- 5 Pour the batter into your baking tin.


Place it into the pre-heated oven for 30 minutes (time may vary a little)
There you go!! This cake turned out to be light and moist. Taking an easy way out, I sprinkled some icing sugar.

To have it like a dessert, I drizzled some melted fine dark orange chocolate.

Definitely an icing on a cake.. 😀
Looks great ! If I want to try another flavour (say strawberry) what should I substitute/modify in this recipe ?
Thank you! 🙂 For a change of flavor in this recipe, you can use strawberry jam (including pulp) or strawberry crush! That would be same quantity as above. Also, replace tang with milk or any strawberry flavored drink. Always put the liquid in the end to make sure the batter is not runny. Do let me know when you try it out.
