Stir-fried Vegetables with Buttered Rice & Black Pepper Sauce

We’re all in a situation where ordering from restaurants is not a norm anymore or at least until we’re able to flatten the curve in terms of COVID-19 cases. The only way to satiate your food cravings is to head to the kitchen and put on the chef’s hat.

That’s how my flatmates and I took it upon ourselves to plate up a fancy looking dish and I think we did a pretty good job. I must say even though staying in lockdown for more than two months now is definitely not a pleasant feeling, but on the flip side, it has helped us build memories we’d want to cherish for life.

STIR-FRIED VEGETABLES WITH BUTTERED RICE & BLACK PEPPER SAUCE

Boiled Corn on the Cob

Ingredients

  • 2 whole sweet corn
  • 1 tsp butter
  • Salt to taste

Directions


1. Break the whole sweet corn into 2 halves.
2. In a pressure cooker cook the corn with water and a pinch of salt on a high flame for 2 whistles.
3. After it’s done add butter for additional flavor (optional).

Buttered Rice

Ingredients

  • ¾ cup rice (I used basmati rice)
  • Spring onion greens
  • Butter – 1 tbsp
  • Olive Oil – 1 tsp
  • Salt to taste

Directions


1. Boil rice. The ratio of water is to rice is the same to get a sticky texture. Cook well till the water dries up.

2. Heat butter in a pan and add the cooked rice with salt to taste.
3. Add in spring onion greens and mix well.

Stir-Fry Vegetables

Ingredients

  • 1 big onion finely sliced
  • 4-5 cloves of finely chopped garlic
  • 2 green chilies finely chopped
  • 1 carrot diced
  • 6-7 broccoli florets
  • ½ cup red & yellow bell-peppers
  • 1 cup sliced mushrooms
  • 1 ½ cup chopped spinach
  • Chopped ginger (optional)
  • 1 tsp butter
  • 1 tbsp olive oil
  • Salt to taste
  • Feel free to adjust the quantity of the vegetables as per your liking.

Directions


1. Heat oil in a pan. Add garlic and green chilli. Sauté on a high flame.
2. Add onions and salt to taste to quicken the process.
3. Next add carrots and mushroom. Cook until the mushrooms release its moisture.
4. Add broccoli and stir. Next add spinach and bell-peppers.
5. Make sure the vegetables are not raw, but should have a bite to them.

Black Pepper Sauce

Ingredients

  • Freshly Ground Black pepper – ¼ cup
  • One medium-sized onion – finely chopped
  • 5-6 cloves of garlic – finely chopped
  • 1 tsp butter
  • 1 tbsp olive oil
  • 1 ½ tsp plain flour
  • Milk – ½ cup (can alter depending on taste and consistency)
  • Processed Cheese – 2 cubes
  • Salt to taste
  • Water as required

Directions


1. Heat oil in a pan and add butter. Add garlic and sauté.
2. Add onions and sauté until translucent. Add salt to taste to quicken the process
3. Add black pepper and mix well.
4. Add 1 cup water and stir.
5. In a separate bowl, add a little water to the plain flour to make a slurry.
6. Add this slurry to the pepper sauce and stir continuously to avoid lumps.
7. Add milk and bring to a boil.
8. Add grated cheese and mix well.

The meal is so satisfying and will leave you smiling by the end of it.
