Who doesn’t like potato fries? I mean, it’s the perfect snack for a lazy glutton like me. It’s also always an easy way for kids to get some food in their tummy with no tantrums. 😀
Whenever I ate fries at a restaurant, I was always curious to know how they’re so nicely cut and remain crunchy even after they’re left on the table for a while. I did a lot of trials in the kitchen, looked for the perfect recipe online, etc., failed a couple of times and finally stuck to one method which has always worked for me since then.

As it’s really easy and convenient, I decided to share it with you all. Here I’ve made them with sweet potato. The same method can be used for your good old potatoes too.
Here’s what you’ll need.
HAND-CUT SWEET POTATO FRIES
Ingredients
- 1 large sweet potato
- 2 tbsp plain flour (maida)
- Seasoning – Salt & Freshly Ground Black Pepper
- Refined oil for frying
Directions
1. Wash and peel the sweet potato. Cut it in two halves and slice the sides. You’ll be left with a block of sweet potato. Slice it evenly depending on the thickness you’re looking for. Dip the raw fries in water to prevent them from discolouring.

2. Next, boil water in a pan and add your raw fries in it for about a minute of two.
3. Drain the water and spread it on a flat surface to cool and dry.
4. Dust the fries with plain flour. At this point you can either fry them straight away or place them in an air tight container and freeze them (they’ll be like frozen fries and ready to cook).
In this recipe, I placed them in the freezer for an hour or so.
5. Heat oil in a deep pan. If the raw fries are frozen, add them little by little ensuring not to drop the temperature of the oil. Fry on a high flame for two minutes and take them out.
6. After you’re done frying the entire batch, add them again to the fryer. That way you’re sure to get delicious crispy fries every single time.

That’s about it. Sprinkle some salt and freshly ground black pepper or a squeeze of lime is equally flavorsome.


Serve hot with your favourite dips. They taste so good on their own too.
