Chocolate Almond Cookies in 2 Minutes

Food is both a Science and an Art. I read this years ago and it completely changed my perception towards it. Food turned into a necessity passion. Every dish I create brings a different experience that negates the scope for monotony.

Coming to my recipe, there’s this eggless mug cake recipe I picked up from Hebbar’s Kitchen which just works wonders every single time. I’ve been making it so often only because it’s so easy to prepare and it makes up for a quick post-lunch dessert.

So, as cakes and cookies pretty much require the same ingredients, I thought to myself, if it’s possible to make a cake in the microwave, making cookies should also work. Here’s where science comes in. I experimented with the quantity and swapped a few ingredients; developed a recipe keeping in mind the texture, cooking time, and the taste of course 😀 .

After going through the cooking process comes time for art, where you use your creativity in plating and make the dish look appealing enough to tingle your taste buds.

Cookie lovers should give this recipe a try. Here’s what you’ll need: –

CHOCOLATE ALMOND COOKIE IN 2 MINUTES

Ingredients

  • 3 tbsp plain flour
  • 1 tbsp cocoa powder
  • 1 tbsp roasted almond meal (Dry roast almonds for 3-4 mins. Cool and blitz to form a powder)
  • 2 tbsp granulated sugar
  • A pinch of salt
  • 1 ½ tbsp clarified butter (can replace it with butter)
  • 1 tbsp milk
  • 2-3 roasted almonds (chopped and sliced)

Directions


1. Grease a glass plate and keep aside.
2. Combine all the dry ingredients – plain flour, cocoa powder, roasted almond meal, sugar, chopped almond bits and salt.
3. Add clarified butter and milk to the above dry mix and form a dough.

4. Divide them equally and flatten them out on the glass plate keeping the centre thicker. Top it with roasted almond slices.
5. Place them in the refrigerator for 10 mins. (This step is optional. The cooled down dough gave a smoother texture).
6. After the dough has hardened, put the cookie in the microwave for 1 minute. Place the cookie one at a time.
7. Check the cookie and cook for another 15 seconds if required. (Timing will differ by 10-15 seconds depending on the microwave settings and the thickness of the cookie).

8. Let it rest for 5 minutes and you’re good to polish it off.

I recommend placing them in the microwave one by one as it needs to get cooked evenly.
