It’s Christmas time, which means the best time of the year has arrived 😀 and Christmas would be incomplete without food and sweets. I really wanted to share a nice recipe with you all which would be easy to prepare and suitable for this holiday season as well. My friends and I wanted to make something with avocados. Stir-Fried Rice with Sautéed Cauliflower in Sriracha Sauce
Rice is one of my favorite ingredients to cook with and eat too. This particular rice dish doesn’t include so many ingredients. It has your basic ginger, garlic and green chili. Cauliflower tossed in garlic gives it a really mellow flavor. The Sriracha sauce on the other hand has the correct amount of spiciness which blends well with the rest of the ingredients. There are several ingredients you can add to your noodles. It all depends on the taste that you are looking for at that point of time. For now, chili lemon sauce sounded good in my head, so I thought of giving it a try. It turned out great. The recipe was flavorsome and nutritious too because of all the vegetables I added to my noodles. Although, this time I used store-bought red chili sauce, you can also make chili sauce at home. Here is the link to one of my chili sauce recipes – Cayenne Pepper Garlic Chutney. Lemon juice gives the recipe a fresh taste in place of adding vinegar.
Once again I would say the same thing I do for mostly all my recipes – feel free to add your favorite vegetables and you will definitely end up creating a new recipe which you’ll be proud of. 🙂

This recipe I have come up with is really simple. It requires very little cooking time and can be made in a jiffy. It is definitely nutritious, and we all know how healthy greens are for your body. Feel free to add your own veggies for your toppings like zucchini, mushrooms and bell-peppers. Red and yellow color would just make the topping more colorful and appealing. Green chili gives the topping a slight kick which is good. Do give it a try. It is delicious. 😉 Adjust the quantity of the ingredients according to your liking.
This is what you will need:-
Ingredients (Makes 3)
11/2 cup broccoli
1 medium-sized red onion (roughly chopped)
1 finely chopped green chili
A handful of green beans
A few sprigs of coriander
3 tbsp fresh cream
Grated Processed Cheese
1 tsp Olive Oil
Chili flakes, freshly cracked black pepper and salt for seasoning
Method
- To make the topping, heat olive oil in a pan.
- Add onions and green chili. Sprinkle a pinch of salt and sauté on low-medium flame until translucent.
- Next, add green beans and broccoli. Sprinkle a handful of water and let it cook for 2-3 minutes. We want the keep the filling slightly crunchy. You can even blanch them beforehand and add them to the onions along with rest of the ingredients.
- Add fresh cream, seasoning of your choice and grated cheese. Mix well and add coriander.
- Place the topping on your toast. You can even use toasted garlic bread. Butter it and toast well.

You can make anything out of it. Be it a complete mess or something nice and beautiful! Something worth tasting. 🙂 Usually, you need a particular sauce to go with your plain boiled pasta. But, what if you don’t want to make any? No worries, this pasta I’ve made here doesn’t require you to make any kind of sauce and is quick and easy to prepare. Oh! And of course, delicious too. Mushrooms and rice go really well together. You can add various other vegetables like green beans, carrots, cauliflower, etc. to make a different version of your own. I usually don’t like to keep a fixed recipe. Most of the times I add ingredients according to my taste buds at that point of time. That way one can come up with fresh recipes every single time. Hope you all like this one. 🙂
This is what you will need:-
Ingredients
½ cup Basmati Rice
1 cup diced button mushrooms
1 medium-sized red onion cut in julienne
2-3 garlic cloves
1 green chilli
1 tsp finely chopped ginger
¼ cup diced capsicum
2-3 sprigs of fresh coriander
3-4 black peppercorns
Shahi biryani masala (Everest)
1 pinch asafetida
1 tsp cumin seeds
1 tbsp clarified butter
1 tsp fresh lemon juice
Salt to taste
Method
- Heat clarified butter in a vessel. Add cumin seeds and asafetida. Saute on a medium-high flame.
- Add ginger, garlic and green chilli. Saute for 2 minutes.
- Next, add onions and sauté until they turn translucent.
- Add button mushrooms
- Next, add rice, biryani masala, black peppercorns, salt to taste and around one cup water.
- Cover the vessel with a lid and let it cook on a medium low flame for 5-7 minutes. Check at regular intervals. Add more water if required. Give it a taste to see if rice is properly cooked.
- Add fresh lemon juice and finely chopped coriander. Have with any nice Indian gravy or curd.

Whenever I crave for donuts, memories always take me back to my initial visit to Tampere, Finland in 2008. Before that I didn’t know what donuts really tasted like and now, they are one of my most favorite edible foods on earth. 😉
There is this very old and famous place in Tampere called Pyynikki. They have a park there named Nakotorni, which has an Observation Tower built in 1929, replaced by the old tower dating back to 1888. The old tower was damaged during the civil war in 1918. There is a lovely café at the bottom of the tower that serves the best bestest donuts (Munkki in Finnish) along with tea/coffee for 2euros.

Now, why would I name this dish lazy? I could have simply called it Dahi Aaloo (Potatoes cooked with curd) or something like that. Otherwise, in most cases preparing for the dish takes more time than cooking it. It is a perfect recipe for someone is looking for a less preparation dish.

This particular idea just came to me out of the blue! I think it is quite a fun way to pep up the way your sandwich looks. 😉 Give your plain sandwich slice a new twist. You can use different cookie-cutter shapes, involve kids in the kitchen! I am pretty sure they will enjoy making it too…I have used garlic bread here along with a savory filling!
How about dipping your cookie cutter in chocolate sauce for a chocolate (Nutella) sandwich! Dip it in jam for the PBJ Sandwich! I think options become limitless once you begin to use your imagination.
This is what you will need :-
Ingredients
Slices of bread
Sandwich Filling- Tomato, spinach, cottage cheese cubes, onion, butter, green chili, 1 tsp fresh cream, 1 tsp tomato chili sauce, oregano seasoning, salt and black pepper
Heart-Shaped Cookie Cutter
Method
- Dip your cookie cutter into ketchup and place it on your slice HALF way through.
- Place one slice in your non-stick pan. Spread the filling and cover it with another slice. Toast on both sides and serve.
If you are making it for someone special– just for fun you can cut it in two halves and ask them to join it… Just like a fun message! 😉

Warm Potato and Pasta Salad in Sweet Onion Dressing
We all know how well sweet and sour flavors complement each other. Right? This recipe here, is another yummy example of the heavenly sweet and sour combination. This salad is very light on the palate and a great muncher. The Sweet Onion Dressing is more like a thick sauce, well-coated in potatoes and pasta. To be honest, I was attempting to make a normal liquid dressing. It didn’t quite turn out like that though. I think I still need to figure out how to make the actual dressing. Anyhow, this one turned out pretty great for now. The ingredients here blend really well with one another, in turn bringing out a lovely dish to savor or devour rather. 😉
