This recipe I have come up with is really simple. It requires very little cooking time and can be made in a jiffy. It is definitely nutritious, and we all know how healthy greens are for your body. Feel free to add your own veggies for your toppings like zucchini, mushrooms and bell-peppers. Red and yellow color would just make the topping more colorful and appealing. Green chili gives the topping a slight kick which is good. Do give it a try. It is delicious. 😉 Adjust the quantity of the ingredients according to your liking.
This is what you will need:-
Ingredients (Makes 3)
11/2 cup broccoli
1 medium-sized red onion (roughly chopped)
1 finely chopped green chili
A handful of green beans
A few sprigs of coriander
3 tbsp fresh cream
Grated Processed Cheese
1 tsp Olive Oil
Chili flakes, freshly cracked black pepper and salt for seasoning
- To make the topping, heat olive oil in a pan.
- Add onions and green chili. Sprinkle a pinch of salt and sauté on low-medium flame until translucent.
- Next, add green beans and broccoli. Sprinkle a handful of water and let it cook for 2-3 minutes. We want the keep the filling slightly crunchy. You can even blanch them beforehand and add them to the onions along with rest of the ingredients.
- Add fresh cream, seasoning of your choice and grated cheese. Mix well and add coriander.
- Place the topping on your toast. You can even use toasted garlic bread. Butter it and toast well.
Sometimes you wish for something and you get something else in return totally unexpected. That is how unpredictable life is. I believe food and life are very similar to each other. You can make anything out of it. Be it a complete mess or something nice and beautiful! Something worth tasting. 🙂 Usually, you need a particular sauce to go with your plain boiled pasta. But, what if you don’t want to make any? No worries, this pasta I’ve made here doesn’t require you to make any kind of sauce and is quick and easy to prepare. Oh! And of course, delicious too. It’s been a while since I’ve posted anything on my blog. Reason being, I have been involved in a lot of travelling since the past two months. I stayed for about a month and a half in Sydney, and also got a chance to visit the calm and serene capital of Australia – Canberra. Apart from all the crazy fun I had during my stay in Australia, it has also been a great learning experience for me. My visit to Australia is definitely going to be one of the most memorable trips of my life. A visit to this place should be on top of everybody’s bucket list. Iced treats are a great way to cool off in this scorching heat and when humidity is at its worst. Fruit based frozen treats are flavorsome and at the same time guilt-free too. Tropical fruits are definitely my most preferred fruits for making fruit based recipes. If you don’t want to have fruits right away and you think they might get spoiled, best way is to peel and cut them followed by storing them in the freezer in an air-tight freeze-proof container for future use.
This time I decided to use pineapple. The three forms I’ve prepared here have the same recipe, therefore making it very hassle-free to prepare depending on the time you have. Whenever I crave for donuts, memories always take me back to my initial visit to Tampere, Finland in 2008. Before that I didn’t know what donuts really tasted like and now, they are one of my most favorite edible foods on earth. 😉
There is this very old and famous place in Tampere called Pyynikki. They have a park there named Nakotorni, which has an Observation Tower built in 1929, replaced by the old tower dating back to 1888. The old tower was damaged during the civil war in 1918. Pasta is definitely my weakness. I can hog onto a good plate of pasta at anytime of the day. Moreover, it is such a flexible dish to prepare and requires no fixed ingredients. The one I have made here is light on the palate and at the same time quite flavorsome as well. Also, over here I have prepared Alfredo Sauce with wheat flour. It is a healthier and an easier option and there are very less chances of lumps being formed while preparing the sauce. It was pretty weird for me to try it out with wheat flour for the first time, but surprisingly it tasted the same as the actual white sauce. Fresh Mint Leaves. Cucumber. Curd. being the main ingredients of this recipe led me to name it Summer Coolant Salad. Pasta gives body to the salad, peanuts give the salad a nice crunch; whereas, the rest of the ingredients enhance the taste of the dish. It is refreshing and at the same time very nutritious.
It is important to eat the right kind of foods during summers because they help keep you cool and hydrated. Curd contains good bacteria that increases the immunity level in the body and helps in digestion too. I have curd everyday in the form of Lassi (half glass curd, half glass water, a pinch of freshly ground black pepper and black salt). It tastes delicious. 😉 Needless to say, mint is a perfect summer herb. I love the strong aroma that comes from fresh mint leaves. It is so soothing. We all know how well sweet and sour flavors complement each other. Right? This recipe here, is another yummy example of the heavenly sweet and sour combination. This salad is very light on the palate and a great muncher. The Sweet Onion Dressing is more like a thick sauce, well-coated in potatoes and pasta. To be honest, I was attempting to make a normal liquid dressing. It didn’t quite turn out like that though. I think I still need to figure out how to make the actual dressing. Anyhow, this one turned out pretty great for now. One great thing about salads is that they can be modified to one’s own taste and liking. Some like to eat an all veggie salad whereas, some want fruits along with veggies. Some like with dressing, some without and several other ways, I could write a book on it ;). One can really get the real taste of fruits and vegetables when eaten in raw form. For me personally, I like salads that are crunchy, refreshing, light on the palate, and of course, TASTEFUL! 😉
This is another one of my very easy to do, healthy salad recipes. It makes a great appetizer, mid-meal snack or whatever you may want to call it. I just followed my taste buds, tossed some ingredients together, and done!
This is what you will need:
1 cup boiled chick peas
1 diced cucumber
1 finely chopped tomato
1 medium size red onion
3-4 sliced black olives
For the dressing– 2-3 tsp chili oil, juice of 1 lemon, ½ tsp freshly ground black pepper and salt to taste. (Combine well)
Chaat Masala and spinach leaves for garnish
Combine all your veggies—pour dressing over them and mix well.
Sprinkle finely chopped fresh spinach leaves for some Popeye power 😉 (I still love to watch cartoons sometimes)!! and some chaat masala to give the salad an extra kick!
Note: In case, you want to make chili oil at home, heat 1 cup unflavored oil in a pan and add around 3 tbsp finely chopped red chilies. Fry for about a minute on a medium flame. Basically, we want to make sure we have taken the moisture out of the chilies. Make sure not to burn them. Set aside to cool and store it in a dispenser.
If you are adding fresh red chilies, you can use them along with the oil. Otherwise, I am not so sure about the same for the chili flakes.
I will soon be doing a post on how to make chaat masala at home. It is very easy to make and much cheaper and fresher than the ones sold in markets.

Rajma is a North Indian dish; consisting of red kidney beans in a thick gravy, prepared with various spices, onions, green chilies ginger, garlic, etc. and it is mostly eaten with rice. You can replace Rajma curry with boiled red kidney beans (wash them properly and soak in water for about an hour and pressure cook them with a little salt). There was some leftover Rajma from lunch, so I came up with these cutlets just for a change of taste.
