It’s Christmas time, which means the best time of the year has arrived 😀 and Christmas would be incomplete without food and sweets. I really wanted to share a nice recipe with you all which would be easy to prepare and suitable for this holiday season as well. My friends and I wanted to make something with avocados. Stir-Fried Rice with Sautéed Cauliflower in Sriracha Sauce
Rice is one of my favorite ingredients to cook with and eat too. This particular rice dish doesn’t include so many ingredients. It has your basic ginger, garlic and green chili. Cauliflower tossed in garlic gives it a really mellow flavor. The Sriracha sauce on the other hand has the correct amount of spiciness which blends well with the rest of the ingredients. This recipe is really healthy and has very subtle flavors. It can be had with any Indian gravy or on its own as well. Freshly ground black pepper gives this rice a really nice punch. If you like, you can add more spices and veggies to it. Adding curd to the rice gives it a very mild flavor.

For now, chili lemon sauce sounded good in my head, so I thought of giving it a try. It turned out great. The recipe was flavorsome and nutritious too because of all the vegetables I added to my noodles. Although, this time I used store-bought red chili sauce, you can also make chili sauce at home. Here is the link to one of my chili sauce recipes – Cayenne Pepper Garlic Chutney. Lemon juice gives the recipe a fresh taste in place of adding vinegar.

Mushrooms and rice go really well together. You can add various other vegetables like green beans, carrots, cauliflower, etc. to make a different version of your own. I usually don’t like to keep a fixed recipe. Most of the times I add ingredients according to my taste buds at that point of time. That way one can come up with fresh recipes every single time. Hope you all like this one. 🙂
This is what you will need:-
Ingredients
½ cup Basmati Rice
1 cup diced button mushrooms
1 medium-sized red onion cut in julienne
2-3 garlic cloves
1 green chilli
1 tsp finely chopped ginger
¼ cup diced capsicum
2-3 sprigs of fresh coriander
3-4 black peppercorns
Shahi biryani masala (Everest)
1 pinch asafetida
1 tsp cumin seeds
1 tbsp clarified butter
1 tsp fresh lemon juice
Salt to taste
Method
- Heat clarified butter in a vessel. Add cumin seeds and asafetida. Saute on a medium-high flame.
- Add ginger, garlic and green chilli. Saute for 2 minutes.
- Next, add onions and sauté until they turn translucent.
- Add button mushrooms
- Next, add rice, biryani masala, black peppercorns, salt to taste and around one cup water.
- Cover the vessel with a lid and let it cook on a medium low flame for 5-7 minutes. Check at regular intervals. Add more water if required. Give it a taste to see if rice is properly cooked.
- Add fresh lemon juice and finely chopped coriander. Have with any nice Indian gravy or curd.

Eating lentils (dal) everyday can get really monotonous and boring food in the Indian household, especially with children. It is very difficult to make them eat healthy foods. That is when imagination comes in. These savory bites are completely a different form of your regular dal. They are super soft, easy to make and completely hassle-free. Kids are definitely going to ask for more.
For vegetarians, lentils are the greatest source of proteins, dietary fiber, iron and minerals. So, without doubt these bites are completely nutritious. Add in your favorite vegetables in place of corn like grated carrots, green beans, bell-peppers, cheese etc. and create your own variations.
YELLOW LENTIL SAVORY BITES
Ingredients
- 1 1/2 cup yellow lentils(moong dal) (wash and soak overnight)
- 1 cup boiled corn kernels (Coarsely crushed in a mixer grinder)
- 2 tbsp fresh cream (use butter if you like)
- 1 tbsp olive oil
- 1 tsp baking powder
- 1 pinch baking soda (Soda Bicarbonate)
- 2 tsp ginger and green chili paste (2 green chillies, 1 inch ginger)
- ¼ tsp turmeric powder
- ¼ tsp red chili powder
- Salt to taste
- Oil for greasing

1. Grease baking tray and keep aside. Pre-heat oven at 180 degree centigrade.
2. Add yellow lentils in a mixer grinder and blitz to form a smooth paste.

3. In a bowl add in your lentil paste, ginger green chili paste, red chili powder, fresh cream/butter, olive oil, boiled and crushed corn kernels, turmeric powder, salt to taste and 1/4 cup water.
4. Add baking powder and soda bicarbonate. Squeeze a drop of lemon juice on soda bicarbonate for it to activate. Mix well.

5. Pour batter in your greased tin and bake for 25-30 minutes at 180 degree centigrade. (Time may vary). Check with the help of a toothpick.

6. Let it cool for 5 minutes and scrape the sides with help of a knife and unmould.


Serve it up with tomato onion chunky chutney or any dip of your choice.
If you don’t want to bake, have it in the form of crepes or spread the batter on a piece of bread slice and cook it on a non-stick pan.

What better way to enjoy a match, while eating something hearty and comforting like a hot dog maybe?

Baking a cake can be a really daunting thought for a newbie. It sure was for me. I always took help from my sister until one fine day, I finally decided to bake one all by myself. Thankfully, all went well and since then it has just been a cakewalk for me 😉 . Once you understand the basic recipe of the cake, you will be able to experiment with different cake flavors very easily. Everybody has their own personal recipe for their cakes. I took the basic cake recipe from my elder sister and keep making changes accordingly. Hope you all enjoy this version of mine. You can increase the quantity of sugar if you like. I prefer to keep it less.

I have clearly fallen in love with this chutney. As soon as one batch gets over, I yearn to make another batch of this delicious super delicious goodness. It is mildly spicy and full of flavor. Serve it up with your favorite munchies or use it as a spread. I bet it will go well with mostly any dish you name. It is easy to prepare and store as well.
Pasta in Green Chili and Homemade Alfredo Sauce
Pasta is definitely my weakness. I can hog onto a good plate of pasta at anytime of the day. Moreover, it is such a flexible dish to prepare and requires no fixed ingredients. The one I have made here is light on the palate and at the same time quite flavorsome as well. Also, over here I have prepared Alfredo Sauce with wheat flour. It is a healthier and an easier option and there are very less chances of lumps being formed while preparing the sauce. It was pretty weird for me to try it out with wheat flour for the first time, but surprisingly it tasted the same as the actual white sauce. Since then, I prefer to make white sauce the way I’ve mentioned below. Hope you all give it a try. 🙂
